Milk - 250 ml
Sugar - 150 gms
Orange peel - 1 tbsp
Lime peel - 1/2 tbsp
Egg - 3 ( 3 egg yolk and 2 egg white)
Procedure:
- In a pan add milk, 100 gms of sugar and both the peels(shredded) and bring the milk to boil.
- Simmer it to 10-15 mins such the milk gets the flavor of orange and lime peels.
- Cool the milk and filter off the orange and lime peels.
- In a thick bottom pan, add the remaining sugar and caramelize using the dry method.
- Once the sugar is caramelized, take a glass bowl and coat the bowl layer with caramel liquid.
- In the mean time beat the eggs well in a separate bowl. Remove the froth for better results.
- Add the cooled milk with the egg and mix it well.
- Add the milk-egg mixture to the glass bowl which is layered with caramel.
- Cover the glass boil with aluminium foil and place it in a glass container filled with little water.
- Place the glass container in the Oven at 150°C for 90 mins.
- Remove the glass container from oven and tale the glass bowl immediately and place it in the refrigerator for 2 to 3 hours to set.
- Remove it from the fridge and run a knife along the edges to loosen the sides. not place a place on the bowl and turn it around and tap the bowl gently.
- Orange-Lime caramel custard is ready :)
