Carrot Halwa


Ingredients:
Carrot(grated) - 2 cups
Milk - 4 cups
Sugar - 3/4 cup (According to the sweet preference)
Salt - a pinch
Cardamom -  1/2 tsp
Ghee - 2 tbsp
Cashew, Pista, Almonds - as per your wish
Saffron flower - 6-7 strands



Procedure:

  1. In a heavy bottom pan, boil milk with carrot, sugar and salt. 
  2. Once carrot is cooked, simmer the flame and leave this mixture till the milk reduces and the mixture doesn't stick to the pan.
  3. At this point add 1tbsp of ghee, cardamom and saffron flower to the mixture and mix it well.
  4. Remove it from the flame .
  5. Now roast the cashews in the remaining ghee.
  6. Garnish the halwa with roasted cashews.
  7. Carrot Halwa is ready.... Delicious, isn't it !!!
